Oat, apple and raisin VEGJAY protein cookie

Here is a recipes we took from Ma Fourchette but we modified it to make it more nutritive and vegan!

Ingredients

  • 1 cup oatmeal
  • 4/5 (200mL) cup whole wheat flour
  • 2 1/2 tablespoons of VEGJAY Hemp protein
  • a pinch of salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon of baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 6 tablespoons vegan butter, softened
  • 1/2 cup brown sugar
  • 1 banana or 100g silky tofu
  • 1 teaspoon vanilla
  • 1 cup grated apple
  • 1/2 cup dried grapes

Preparation

  1. In a bowl, combine the oats, flour, hemp protein, salt, baking powder, baking soda, cinnamon and nutmeg.
  2. In another bowl, whisk the butter and brown sugar.
  3. Add the banana (or tofu) and vanilla and whisk until the mixture becomes frothy.
  4. Stir in grated apple.
  5. Add the dry ingredients and dried grapes.
  6. Cover and refrigerate the dough for at least one hour.
  7. Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  8.  Shape your cookies and add them to the prepared baking sheet.
  9. Bake for 10 minutes.
  10. Let cool for a few minutes.

Notes

You can also add chocolate chips, coconut or walnuts to your cookies. Be creative! Tag us and to let us know what think! 🙂
