Here is a recipes we took from Ma Fourchette but we modified it to make it more nutritive and vegan!

Ingredients
- 1 cup oatmeal
- 4/5 (200mL) cup whole wheat flour
- 2 1/2 tablespoons of VEGJAY Hemp protein
- a pinch of salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon of baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 6 tablespoons vegan butter, softened
- 1/2 cup brown sugar
- 1 banana or 100g silky tofu
- 1 teaspoon vanilla
- 1 cup grated apple
- 1/2 cup dried grapes
Preparation
- In a bowl, combine the oats, flour, hemp protein, salt, baking powder, baking soda, cinnamon and nutmeg.
- In another bowl, whisk the butter and brown sugar.
- Add the banana (or tofu) and vanilla and whisk until the mixture becomes frothy.
- Stir in grated apple.
- Add the dry ingredients and dried grapes.
- Cover and refrigerate the dough for at least one hour.
- Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
- Shape your cookies and add them to the prepared baking sheet.
- Bake for 10 minutes.
- Let cool for a few minutes.
Notes
You can also add chocolate chips, coconut or walnuts to your cookies. Be creative! Tag us and to let us know what think! 🙂
